  • Pasta Salad (Gary Bettenhausen's)

    Ingredients

    • 1 lb pasta mixed
    •     (ie, curly shells and penne)
    • 1 lrg sweet onion thinly sliced, then
    •     quartered
    • 1 x green pepper in 1 1/2 " x 1/8"
    •     strips
    • 1 pt cherry tomatoes halved
    • 1 sm red bell pepper in 1 1/2" x 1/8"
    •     strips
    • 1 can sliced black olives ( I omitted this)
    • 1 bn broccoli florets
    • 1/2 head cauliflower florets
    •     nonfat ranch salad dressing
    •     or possibly nonfat creamy Italian salad dressing or possibly NF Ital. dressing
    •     italian

    Directions

    1. Cook 1 lb pasta in boiling water for 12 min, strain and run cool water over the pasta. Mix the cool, strained pasta with the prepared veggies, toss with the dressing and seasonings.
    2. Moisten with the nonfat salad dressing. Season to taste with salt and pepper.
    3. Chill over night.
    4. serves 10
