Pasta Salad (Gary Bettenhausen's)
Ingredients
- 1 lb pasta mixed
- (ie, curly shells and penne)
- 1 lrg sweet onion thinly sliced, then
- quartered
- 1 x green pepper in 1 1/2 " x 1/8"
- strips
- 1 pt cherry tomatoes halved
- 1 sm red bell pepper in 1 1/2" x 1/8"
- strips
- 1 can sliced black olives ( I omitted this)
- 1 bn broccoli florets
- 1/2 head cauliflower florets
- nonfat ranch salad dressing
- or possibly nonfat creamy Italian salad dressing or possibly NF Ital. dressing
- italian
Directions
- Cook 1 lb pasta in boiling water for 12 min, strain and run cool water over the pasta. Mix the cool, strained pasta with the prepared veggies, toss with the dressing and seasonings.
- Moisten with the nonfat salad dressing. Season to taste with salt and pepper.
- Chill over night.
