Passover Sweet Potato And Prunecasserole
Ingredients
- 6 med. sweet potatoes
- 1 jar stewed prunes
- 3/4 c. honey
- 3/4 teaspoon cinnamon
- 1 teaspoon salt
- 2 T prune juice
- 2 T lemon juice
- 1/4 c. melted butter
Directions
- Cook potatoes till tender. Skin and cut into 1/4 inch slices. Cut prunes in half. Make mix of remaining ingredients. In a 2 qt casserole, arrange alternate layers of sweet potatoes and prunes, pouring the honey mix over each layer. Bake uncovered, basting occasionally for 45 min at 350 degrees. Serves four plus. Add in marshmallows on top the last five min.
