Passover Stuffing With Chestnuts And Mushrooms
Ingredients
- 2 c. Minced onion
- 2 c. Celery,coarsely minced
- 6 Tbsp. Margarine
- 4 x Matzoh crackers
- 2 c. Chestnuts,cooked,minced
- 2 c. Mushrooms,thinly sliced
- 2 tsp Thyme fresh
- 2 tsp Rosemary,fresh
- 2 tsp Sage,fresh
- 1/2 c. Parsley,minced
- 1 tsp Salt
- 1/4 tsp Pepper
- 2 x Large eggs,well beaten
Directions
- Cook onion and celery in margarine in medium-size skillet, covered, over medium heat till tender, 8-10 min. Scrape into bowl.
- Soak matzohs in water to cover 3-5 min. Drain; squeeze dry. Add in to bowl. Add in chestnuts, mushrooms, thyme, rosemary, sage, parsley, salt, pepper and Large eggs. Stuff 12-14 lb. turkey; roast as you or possibly dinarily would.
- Or possibly bake stuffing in greased shallow 2-qt oven-proof casserole in preheated moderate oven (350'F) for 45 min.
