  • Passover Blondies

    Ingredients

    •     A rich bar, with a smooth caramel taste, especially good cool. Something kids
    •     can appreciate during the Passover week.
    • 1 1/2 c. brown sugar
    • 1/4 c. white sugar
    • 1 Tbsp. Passover vanilla sugar
    • 1 c. unsalted butter or possibly unsalted Passover margarine
    • 2 x Large eggs
    • 1/4 tsp salt
    • 1 c. matzoh cake meal
    • 1 c. potato starch
    • 1 c. coarsely minced semi sweet chocolate
    • 1 c. coarsely minced walnuts or possibly pecans

    Directions

    1. Line an 8 by 10 inch brownie pan with greased foil, ensuring you have overhang to lift out squares later.
    2. Cream brown sugar, white sugar, vanilla sugar with butter or possibly margarine. Blend in Large eggs. Stir in salt, matzoh cake meal, and potato starch. Then mix in chocolate and nuts. Refrigeratetwenty min. Preheat oven to 350 F.
    3. Spread and press batter into prepared pan. Bake till done, about 35-40 min, till center is just set, not jiggly. Cold well, then use foil to life out squares from pan. Cut into squares.
    4. Makes 30-40, depending on size.
