  • Padang Style Fried Chicken (Ayam Goreng Padang)

    Ingredients

    • 1 x young chicken - (abt 3 1/2 lbs)
    • 2 x kaffir lime leaves
    • 2 lrg Large eggs beaten
    • 4 piece galangal - (abt 1/2" ea) soaked for 1 hour
    •     Vegetables oil for deep frying
    • 4 sm shallots
    • 2 x garlic cloves
    • 1 tsp sliced fresh ginger
    • 1/4 tsp turmeric
    •     Salt to taste

    Directions

    1. Grind all spice ingredients to create a smooth paste. Then add in the beaten Large eggs and mix well.
    2. In a bowl, mix the chicken with the spice paste and let it stand for 15 min.
    3. Heat the oil in a wok and fry the chicken with galangal slices and lime leaves over medium-high heat for approximately 10 min or possibly till the chicken color turns to brown.
    4. Scoop out the chicken and the sauce which look like shredded coconut and drain the oil briefly on paper towels. Serve hot.
    5. This recipe yields 3 to 4 servings.
