Padang Style Fried Chicken (Ayam Goreng Padang)
Ingredients
- 1 x young chicken - (abt 3 1/2 lbs)
- 2 x kaffir lime leaves
- 2 lrg Large eggs beaten
- 4 piece galangal - (abt 1/2" ea) soaked for 1 hour
- Vegetables oil for deep frying
- 4 sm shallots
- 2 x garlic cloves
- 1 tsp sliced fresh ginger
- 1/4 tsp turmeric
- Salt to taste
Directions
- Grind all spice ingredients to create a smooth paste. Then add in the beaten Large eggs and mix well.
- In a bowl, mix the chicken with the spice paste and let it stand for 15 min.
- Heat the oil in a wok and fry the chicken with galangal slices and lime leaves over medium-high heat for approximately 10 min or possibly till the chicken color turns to brown.
- Scoop out the chicken and the sauce which look like shredded coconut and drain the oil briefly on paper towels. Serve hot.
- This recipe yields 3 to 4 servings.
