    Overnight Layered Salad

    Crispy and fresh ingredients makes this salad a hit at a potluck dinner.

    Ingredients

    • 1 head Iceberg lettuce, torn into bit-sized pieces
    • 1 medium green bell pepper, coarsely chopped
    • 1 large head cauliflower
    • 1 (10-ounce) package frozen English peas, thawed
    • 1 (8-ounce) carton Lite sour cream
    • 1 cup Lite mayonnaise
    • 1 tablespoon white sugar
    • 1 cup grated Parmesan cheese
    • 6 slices bacon, cooked and crumbled into small pieces

    Directions

    1. Break cauliflower into small pieces; wash and set aside.
    2. In a clear 3-quart bowl, layer lettuce, bell pepper, cauliflower, and peas (in that order).
    3. In a separate bowl, combine the sour cream, mayonnaise, and sugar; mixing well. Spread evenly over top of salad, sealing to the edge of the bowl. Sprinkle with cheese and bacon. Cover bowl tightly with plastic wrap and chill overnight.
