  • Oriental-Barbecued Short Ribs

    Ingredients

    • 100 5 oz beef short ribs
    • 1 cup garlic, peel, mince
    • 1 cup ginger, peel, mince
    • 1 1/2 qts soy sauce
    • 3/4 qt sesame seed oil
    • 1/2 cup sesame seeds
    • 2 cups vinegar, white
    • 5 cups sugar
    • 1/4 cup hot mustard, dry
    • 1/4 pepper, black
    • scallions, thinly sliced

    Directions

    1. Trim the excess fat off the short ribs. Score the meat, cutting every 1/2 inch, almost to the bone.
    2. Combine the remaining ingredients (except the scallions) to create the marinade.
    3. Pour the marinade over the ribs, and marinate overnight in the refrigerator.
    4. Remove meat from the marinade, and grill it over charcoals or broil it under a broiler. Broil for about 15 minutes, or until well-brown.
    5. Then place the broiled meat into a hotel pan. Continue cooking the short ribs in a 375F oven for about 30 minutes, or until the ribs are medium-rare to medium or have reached an internal temperature of 140-145F.
    6. Garnish the short ribs with sliced scallions and serve.
