Oriental-Barbecued Short Ribs
Ingredients
- 100 5 oz beef short ribs
- 1 cup garlic, peel, mince
- 1 cup ginger, peel, mince
- 1 1/2 qts soy sauce
- 3/4 qt sesame seed oil
- 1/2 cup sesame seeds
- 2 cups vinegar, white
- 5 cups sugar
- 1/4 cup hot mustard, dry
- 1/4 pepper, black
- scallions, thinly sliced
Directions
- Trim the excess fat off the short ribs. Score the meat, cutting every 1/2 inch, almost to the bone.
- Combine the remaining ingredients (except the scallions) to create the marinade.
- Pour the marinade over the ribs, and marinate overnight in the refrigerator.
- Remove meat from the marinade, and grill it over charcoals or broil it under a broiler. Broil for about 15 minutes, or until well-brown.
- Then place the broiled meat into a hotel pan. Continue cooking the short ribs in a 375F oven for about 30 minutes, or until the ribs are medium-rare to medium or have reached an internal temperature of 140-145F.
- Garnish the short ribs with sliced scallions and serve.
