Open Face Turkey And Chutney Sandwiches
Ingredients
- 6 ounce Cream cheese, softened
- 3 Tbsp. Mango chutney, minced
- 1/2 tsp Curry pwdr, up to 1
- 4 x Bays english muffins, split, lightly toasted
- Baby lettuce leaves
- 1/2 lb Sliced cooked turkey
- 8 slc Tomato, halved
- 8 slc English cucumber, halved
Directions
- Combine cream cheese, chutney and curry pwdr; spread on toasted muffins.
- Top with lettuce. Alternate slices of turkey, tomato and cucumber; garnish with a dollop of spread and cucumber.
- Notes: Cream cheese punctuated with the mild heat of mango chutney and curry pwdr makes an intriguing partner for leftover turkey breast and cold tomato and cucumber slices. Serve these open-face sandwiches as a light end-of- Thanksgiving Day supper. S: 4
