Open Faced Bacon And Cucumber Salad Sandwiches
Ingredients
- 1/2 c. Plain yogurt
- 2 lrg Slices country-style bread
- 1/2 x English cucumber
- 1/2 tsp Chopped garlic
- 6 x Bacon slices
- 2 tsp Packed brown sugar
Directions
- In a fine sieve set over a bowl drain yogurt 20 min. Lightly toast bread. Finely chop cucumber and in a bowl stir together with yogurt, garlic, and salt and pepper to taste.
- In a large heavy skillet cook bacon over moderate heat, turning it, till it begins to brown and is almost crisp. Sprinkle sugar proportionately over bacon and turn it. Cook bacon till golden brown and crisp and transfer to paper towels to drain. Divide cucumber salad between toasts and top with bacon.
