I took a break from my cast iron pan and tried out a Copper Chef pan. It’s such a versatile pan and just perfect for one pan meal. If you are a regular reader you know I love one pan meals because there is less to clean up, and this pan is easy to clean up! Even though it looks like a fry or saute pan, there are so many things you can do with this pan. You can steam, deep fry and even bake in it, and it’s pretty enough to put on the table to serve your food.
This garlic herb chicken recipe is one of our favorite summer recipes. It’s filled with summery fresh herbs, garlic, and lemon. I usually make this dish in my cast iron pan because I like a nice sear on the chicken before I add the liquid. I decided to give this recipe a try in the Copper Chef and it returned an equally as nice sear without sticking! I think I will be using The Copper Chef a lot in the fall and winter for stews and roasts. The square size is just perfect for a large piece of meat. You can brown the meat, pop it into the oven and serve it all in one dish.

One pan garlic herb chicken cooks up quickly, the most time-consuming part is allowing the chicken to marinate. Serve this with a salad or your favorite veggie for a nourishing and delicious dinner.

One Pan Garlic Herb Chicken with White Beans Boneless chicken breasts soak up the flavorful marinade that’s made of fresh pureed herbs and garlic. 1/4 cup olive oil
4 cloves garlic rough chopped
1/8 cup fresh lemon juice
3/4 to one cup combination of fresh herbs such as: oregano, parsley, thyme, rosemary, sage
CHICKEN
1 pounds chicken tenders
2 tablespoons olive oil
1/2 medium red onion sliced thin
1 clove garlic, crushed
1 can or 1 1/2 cups white cannelloni beans
1/4 cup dry white wine Instructions Make the marinade by placing ingredients into a food processor or blender and blend until pureed, if the mixture is thick you can add a bit of water.
Pour the marinade over the chicken and marinate the chicken for at least 2 hours in the refrigerator or overnight if possible
Bring chicken to room temperature, and heat 2 tablespoons olive oil in a pan over medium to high heat
Add the chicken and allow to it to brown lightly then turn over, then add the onion slices allow to cook for 5 minutes
