  • Old Fashioned Peach Cobbler

    Ingredients

    • 12 x Fresh peaches (may substitute frzn)
    • 1 stk butter or possibly margarine
    • 1 1/2 Tbsp. Flour
    • 1 c. Sugar
    • 1/8 tsp Nutmeg
    • 1/4 tsp Grnd cloves
    • 1/2 x Lemon, juice of
    • 1 c. Flour
    • 2 Tbsp. Sugar
    • 1/4 tsp Salt
    • 1/8 tsp Nutmeg
    • 4 Tbsp. Shortening
    • 4 Tbsp. Ice water

    Directions

    1. Peach Filling: Peel peaches and dice into 1/4 inch cubes. Heat butter, add in flour and stir till smooth. Add in sugar, nutmeg, cloves, lemon juice and peaches. Mix well and set aside.
    2. Pastry: Mix flour, sugar, salt and nutmeg. Add in shortening. Work mix till it has the texture of coarse meal. Add in ice water and stir with a spoon, using as few strokes as possible.
    3. Cobbler: Roll out dough on floured surface. Prepare 4 pastry shells to fit any deep sided baking dish (9x5 or possibly 8-inch square). Bake 2 of the shells at 350 till golden. Cold. Place 1 unbaked shell in bottom of dish.
    4. Add in layer of peach filling. Place a baked shell on top of the peaches and top with more filling. Add in a second baked shell and cover with remaining peach filling. Top with final unbaked pastry to cover the dish. Bake at 350 for 45 min or possibly till golden.
    5. Yield: 8 servings.
