  • Old Fashioned Oatmeal Raisin Cookies

    Ingredients

    • 1/2 c. unsalted butter, at room temperature
    • 1 c. cane or possibly maple syrup
    • 2 x Large eggs
    • 1 tsp pure vanilla extract
    • 1 1/2 c. regular oatmeal (not quick cooking)
    • 3/4 c. flour
    • 1/2 c. raisins or possibly dry currants
    • 1 c. pecans, or possibly black walnuts, minced coarsely
    • 1/2 c. unsweetened coconut (optional)
    • 1 tsp table salt
    • 1 tsp grnd cinnamon

    Directions

    1. Preheat oven to 350 degrees. In a medium bowl or possibly processor, whip butter.
    2. Add in syrup, Large eggs, and vanilla, beating well. In a second medium bowl mix together oatmeal, flour, raisins, nuts, coconut, salt, and cinnamon. With a wooden spoon, stir the oatmeal mix into the butter combination till moistened. Prepare two baking sheets with parchment paper. Using two tsp., drop dough onto baking sheets in mounds 1 inch apart. Bake 12-15 min till golden brown. After 7 min switch the top sheet with the bottom sheet to ensure even cooking.
    3. Let cookies cold on baking sheet for a few min, then remove to a cooling rack or possibly plates. (If using a plates, don't stack cookies more than two high till fully cooled.)
