    This is the ultimate Oatmeal Cookie! Eat them any time -- for breakfast, lunch or as a snack treat. They are just a nutritious as they are tasty!

    Ingredients

    • 3 Cups old fashioned oatmeal (toasted)
    • 1 Cup oatmeal flour
    • 1 Cup whole wheat flour
    • 1 Cup nonfat dry milk
    • 1/2 Tsp. cloves
    • 2 Teas. cinnamon
    • 1 Cup coconut
    • 1 Cup rasins
    • 1 Cup walnuts, chopped
    • 1 Tsp. salt
    • 4 Eggs
    • 1 Cup Vegetable oil
    • 1 Cup Honey
    • Used all Organic ingredients

    Directions

    1. Toast the oatmeal in a skillet without oil over medium heat, stirring constantly. Remove from heat when lightly toasted.
    2. Make one cup of oatmeal flour by grinding dry, old fashioned oatmeal in blender or Ninja.
    3. In a large mixing bowl, mix together the toasted oatmeal, oatmeal flour, whole wheat flour, dry milk, cloves, cinnamon, coconut and salt. Add the chopped nuts and finely chopped rasins or other dried fruiit.
    4. Beat the 4 eggs and set aside.
    5. Mix the vegetable oil with the honey and beat well with electric mixer.
    6. Add the eggs to the honey mixture and beat again.
    7. Now mix thoroughly with the dry ingredients.
    8. Drop by teaspoonfuls onto a greased cookie sheet.
    9. Bake for 15 minutes at 300 degrees.
