  • Old Fashioned Buttermilk Cake

    Ingredients

    • 2 stk butter
    • 2 c. Sugar
    • 3 whl Large eggs
    • 2 1/2 c. Plain or possibly cake flour
    • 1 tsp Soda
    • 1 tsp Baking pwdr
    • 1/2 tsp Salt
    • 1 1/2 c. Buttermilk
    • 1 tsp Vanilla
    • 3/4 c. Sugar
    • 2 Tbsp. Cornstarch
    • 3/4 c. Water
    • 1 x Egg, slightly beaten
    • 3 Tbsp. Lemon juice
    • 1 Tbsp. Butter

    Directions

    1. Cream butter, sugar and Large eggs. Sift flour, soda, baking pwdr and salt.
    2. Add in flour mix to creamed mix alternately with buttermilk, starting and ending with flour. Beat till it is a creamy mix. Bake in 3 round pans at 350 degrees for 25 to 30 min. Let cold 10 to 15 min. Make lemon filling.
    3. To make filling: In saucepan mix sugar, cornstarch and salt; add in water, egg yolk and lemon juice. Cook over medium heat till it thickens, stirring constantly. Remove from heat and add in butter. After cake is cooled, place the lemon filling on the first and second layers of the cake; sprinkle some coconut on top of the lemon filling. Put the third layer on top and ice with Seven Minute Frosting, or possibly with a prepared commercial frosting.
