  • old fashion fudge

    Test : drop a few drops of fudge from a spoon into a glass of tap water (cool) once the fudge forms a soft ball but firm ball, remove from burner.

    Ingredients

    • 3 cups sugar
    • 1 1/2 cups milk
    • 2/3 cup cocoa powder
    • 1 stick real butter
    • 2 tsp vanilla extract

    Directions

    1. butter a dish and set aside
    2. combine milk, sugar and cocoa in a large saucepan
    3. stir until it comes to a full boil.
    4. boil for what seems like forever
    5. the fudge will boil to the top of the pan and will subside
    6. once fudge has "clamed" down begin the following test see test above/below
    7. Test :
    8. drop a few drops of fudge from a spoon into a glass of tap water (cool)
    9. once the fudge forms a soft ball but firm ball, remove from burner.
    10. put in butter and vanilla.
    11. do not stir until butter is melted.
    12. once the fudge has reached about room temperature, add nuts and beat until no longer glossy {the fudge is beginning to set)
    13. quickly poor into butter dish
    14. once fudge is completely cool, cut in squares
    15. ** to make peanut butter fudge, add to taste**
