Oatmeal Raisin Cookies
Ingredients
- Mix 1
- 3/4 c. flour, all-purpose
- 2 Tbsp. flour, all-purpose
- 1/2 tsp baking soda
- 1/2 tsp salt optional
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Mix 2
- 1/4 c. wonderslim
- 2 Tbsp. corn syrup light
- 2 Tbsp. vanilla extract alcohol free
- 3/4 c. sugar
- 1/4 c. sugar, brown packed
- 1 c. raisins, seedless soaked
- 1 1/4 c. oats, rolled (raw) toasted
- 1/2 c. walnuts minced
- or possibly pecans
Directions
- Preheat oven to 350. Soak the raisins for 10 min in water. Toast the oats and set aside - I didn't do this. Remove raisins from water drain & set aside.
- ( I just liquid removed when I was ready for them) Spray 2 cookie sheets with pam.
- Sift together mix 1, mix thoroughly and set aside. Beat at high speed
- mix 2 then add in mix 1. Mix in oats, add in the raisins and the nuts ifdesired.
- Drop by spoonful onto cookie sheets. Bake for approx 9 minutes at 350. Mine tookcloser to 15 min.
- These are excellent! The nutmeg really stands out. Possibly because it isn'tcompeteing with butter and shortening.
