Oatmeal Muffins For Diabetics
Ingredients
- 50 grams dry rolled oats
- 34 grams fat - oil
- 5 whole large eggs
- 1 teaspoon salt
- 1 c. water
Directions
- 1st method: Mix dry ingredients, add in water gradually, large eggs well beaten. Add in melted fat. Bake in a hot oven in greased cupcake pans 25 min. Test with toothpick.2nd method: Cook rolled oats, fat, water and salt together till oats are soft. Cool. Add in yolks of large eggs and stir thoroughly. Lastly, add in stiffly beaten egg whites and bake in hot oven. Makes 12 muffins.
