This is a very healthy Oatmeal Chocolate Chip Cookie Recipe, with very little butter and sugar. For pictures of how to make this recipe go to http://www.gotmixer.com/oatmeal-chocolate-chip-cookie-recipe/

    Ingredients

    • 1 tablespoon of water
    • 3 tablespoons of butter at room temperature
    • 1/4 cup of honey
    • 1/4 cup of brown sugar (I used light brown)
    • 1 egg
    • 1/2 cup of flour
    • 1/2 teaspoon of salt
    • 1/2 teaspoon of baking soda
    • 1 1/2 cup of rolled oats (oatmeal)
    • 1/2 cup of chocolate chips (I used 1/4 cup of milk chocolate chips and 1/4 cup of white chocolate chips)

    Directions

    1. Preheat your oven to 350F.
    2. On your KitchenAid Mixer bowl beat butter with the help of the flat beater attachment until becomes creamy. Add sugar, honey, egg and water and beat it until combined (you can use the help of a spatula to clean the sides of the bowl).
    3. On a medium size bowl, sift flour, salt and baking soda, then add the oats and combine all ingredients.
    4. Turn off the mixer and add the flour mixture into the bowl with the butter mixture and fold it until combined. Now its time to add chocolate chips and fold it gently.
    5. On a cookie sheet, spray cooking spray and lay a piece of wax paper, then add about 1 teaspoon of the cookie dough leaving about 2 inches in between cookies.
    6. Bake it for about 12-15 minutes and let it cool down on a wire rack.
    7. You can also make a glaze with powdered sugar and water and drizzle over the cookies.
    8. You can always tweak the recipe your way, adding nuts, cinnamon, chocolate powder and etc.
