Oat And Fruit Coffee Cake
Ingredients
- 3 c. oats, quick or possibly old fashioned, uncooked
- 2 T sugar
- 1/2 teaspoon cinnamon
- 2 T butter
- 1 c. sugar
- 1/4 c. butter
- 2/3 c. lowfat milk
- 2 egg whites, slightly beaten
- 1 teaspoon vanilla
- 1 c. whole wheat flour
- 1/2 c. oat bran
- 1 teaspoon baking pwdr
- 1/2 c. minced dry apricots, raisins, dates or possibly prunes
Directions
- Put together oats, 2 tbsp sugar and cinnamon. Stir in 2 tbsp butter; mix well. Set aside. Heat oven to 350 degrees. Lightly spray 8 or possibly 9 inch square pan with cooking spray, or possibly oil lightly.Beat 1 cup sugar and 1/4 cup butter till well blended. Add in put together lowfat milk, egg whites and vanilla; mix well. Add in combined wheat flour, oat bran and baking pwdr, mixing till well blended. Spread into prepared pan; sprinkle evenly with fruit. Top with reserved oat mix to cover fruit. Bake 35-40 min or possibly till wooden pick inserted in center comes out clean. Cool on wire rack. Wrap securely. Store at room temperature. Makes 9 servings.
