    Aromatic spicy thick creamy gravy with soft tender meat.

    Ingredients

    • Quarter chicken - cut into bite sizes
    • 5 shallots - sliced thinly
    • 2 lemongrass - crushed/smashed
    • Spices - 1 stick cinnamon, 1 star anize and 3 cloves
    • 1/2 cup thick coconut milk
    • 3 potatoes - cut into pieces
    • 1/4 cup oil
    • Salt for taste
    • Curry paste
    • 1 tbsp plain chilli powder (or 10 dried red chillies)
    • 2 fresh red chillies
    • 1/2 inch fresh turmeric (can also use turmeric powder)
    • 5 garlic
    • 1/2 inch lengkuas/galangal
    • 1/2 inch roasted belacan/shrimp paste
    • 1 tsp black pepper seeds
    • blend/process all together for a thick paste

    Directions

    1. Fry curry paste with shallots, lemongrass and spices till aromatic and oil splits.
    2. Add chicken and potatoes.
    3. Stir in and pour enough water.
    4. Season with salt.
    5. Simmer to cook both: chicken and potatoes
    6. Pour coconut milk.
    7. Simmer again to heat through.
    8. Remove from heat.
