Nyonya Chicken Curry
Aromatic spicy thick creamy gravy with soft tender meat. Ingredients
- Quarter chicken - cut into bite sizes
- 5 shallots - sliced thinly
- 2 lemongrass - crushed/smashed
- Spices - 1 stick cinnamon, 1 star anize and 3 cloves
- 1/2 cup thick coconut milk
- 3 potatoes - cut into pieces
- 1/4 cup oil
- Salt for taste
- Curry paste
- 1 tbsp plain chilli powder (or 10 dried red chillies)
- 2 fresh red chillies
- 1/2 inch fresh turmeric (can also use turmeric powder)
- 5 garlic
- 1/2 inch lengkuas/galangal
- 1/2 inch roasted belacan/shrimp paste
- 1 tsp black pepper seeds
- blend/process all together for a thick paste
Directions
- Fry curry paste with shallots, lemongrass and spices till aromatic and oil splits.
- Add chicken and potatoes.
- Stir in and pour enough water.
- Season with salt.
- Simmer to cook both: chicken and potatoes
- Pour coconut milk.
- Simmer again to heat through.
- Remove from heat.
