  • Not Your Mother's Tuna Casserole

    Ingredients

    • 1 box WHITE cheddar macaroni & cheese
    • 1 Tbsp. Butter
    • 1 sm Onion, minced
    • 1 can Tuna, liquid removed
    • 1/2 c. Sharp cheddar grated
    • 1/2 c. Crushed saltines
    •     Salt & pepper to taste

    Directions

    1. Preheat oven to 350 degrees. Prepare the macaroni & cheese according to the package directions. Meanwhile, saute/fry onion in butter until translucent/soft. Add in the tuna, chopping it up in the pan. Season to taste with salt and pepper.
    2. Add in the tuna mix to the prepared macaroni & cheese. Correct the seasoning, put in a casserole dish or possibly pie plate. Top with the cheese & cracker crumbs. Bake in the oven till the cheese is melted and the topping crispy.
    3. Yield: 4 servings.
    4. NOTES : 12-7-97 I used 2 cans of tuna. After I put the casserole together, I poured 1/4 c. of lowfat milk over it before I topped it. It was more moist which way.
