Noodles In Sesame Sauce
Ingredients
- 10 ounce Fresh chinese noodles
- 1 x Oil
- 1 1/2 tsp Vegetable oil
- 3 x Green onions white chopped
- 3 x Cloves of garlic, chopped
- 1/2 x Piece of giner, chopped
- 2 x Small asian chilli peppers
- 3 1/2 tsp Rice vinegar
- 2 tsp Soya sauce
- 2 tsp Sugar
- 1 1/2 tsp Chinese sesame paste
- 1/2 c. Chicken stock or possibly broth
- 1 tsp Sesame oil
- 1 tsp Roasted sesame seeds
- 1 x Fresh coriander leaves chop
- 1/2 c. Julienned carrots/cucumbers
Directions
- Cook noodles, fresh or possibly fried, till al dente. Drain and rinse in cold, then cool, water. Drain well.
- Sprinkle with vegetable, peanut or possibly sesame oil.
- (Cool, oiled cooked noodles can be stored in the fridge for several days). SAUCE: In a small skillet, heat vegetable oil and saute/fry onions, garlic, ginger and chili peppers till garlic is soft but not brown.
- Turn off heat and add in vinegar, soy sauce, sugar, sesame paste and chicken stock. Heat and simmer sauce, stirring for 2 min. Stir in sesame oil. Cold to room temperature. Pour sauce over chilled noodles and mix well. Heap noodles on s platter and garnish with sesame seeds, coriander and julienned vegetables.
