No Bacon Mac N Cheese
When out of bacon and green onions, but need to get rid of that soon-to-mold cheese or have a craving, cleaning out the frig can really be worth it. If you save bacon grease, cheating by using it to saute onions can pay off in flavor. I grabbed what seemed to fit mac and cheese. What a nice surprise. I couldn't wait for lunch. Ingredients
- 16 oz or 1 bag of Whole Wheat Rotini, Penne, or Macroni Pasta
- 1/2 log cubed Queso Blanco Velveta
- 1/4 oz or 1/2 pkg Mixed Shredded Cheese
- 1/4 oz or 1/2 pkg Shredded Mozzarella Cheese
- 4 slices cubed Swiss Cheese
- 1/4 cup Parmesan Cheese
- 1 cup Nonfat or Soy Milk
- 1/2 cup toasted chopped Walnuts
- 2 or 3 thinly sliced and caramelized Onions
- 1 chopped clove Garlic
- 2 leaves chopped Basil
- 1 Tablespoon Nutmeg
- 1 teaspoon dried Cilantro
- 1 small thinly sliced Jalapeno (Optional)
- Bacon grease (previously saved)
- Rainbow Pepper
- Salt
Directions
- Cook Pasta
- Caramelize Onions in bacon grease
- When Onions are reduced and browned, add chopped Garlic
- Add cubed Cheeses to Milk and melt until smoothe
- Cut up basil and add to mixture along with other seasonings
- Add toasted Walnuts
- When pasta is cooked, drain and add to mixture
- If you want a little kick add thinly sliced Jalapeno.
