No Bacon Mac N Cheese

When out of bacon and green onions, but need to get rid of that soon-to-mold cheese or have a craving, cleaning out the frig can really be worth it. If you save bacon grease, cheating by using it to saute onions can pay off in flavor. I grabbed what seemed to fit mac and cheese. What a nice surprise. I couldn't wait for lunch.

Ingredients

  • 16 oz or 1 bag of Whole Wheat Rotini, Penne, or Macroni Pasta
  • 1/2 log cubed Queso Blanco Velveta
  • 1/4 oz or 1/2 pkg Mixed Shredded Cheese
  • 1/4 oz or 1/2 pkg Shredded Mozzarella Cheese
  • 4 slices cubed Swiss Cheese
  • 1/4 cup Parmesan Cheese
  • 1 cup Nonfat or Soy Milk
  • 1/2 cup toasted chopped Walnuts
  • 2 or 3 thinly sliced and caramelized Onions
  • 1 chopped clove Garlic
  • 2 leaves chopped Basil
  • 1 Tablespoon Nutmeg
  • 1 teaspoon dried Cilantro
  • 1 small thinly sliced Jalapeno (Optional)
  • Bacon grease (previously saved)
  • Rainbow Pepper
  • Salt

Directions

  1. Cook Pasta
  2. Caramelize Onions in bacon grease
  3. When Onions are reduced and browned, add chopped Garlic
  4. Add cubed Cheeses to Milk and melt until smoothe
  5. Cut up basil and add to mixture along with other seasonings
  6. Add toasted Walnuts
  7. When pasta is cooked, drain and add to mixture
  8. If you want a little kick add thinly sliced Jalapeno.
