Nip It In The Bud Spuds
Ingredients
- 3 lb Potatoes Peeled, cooked and warm
- 1 pkt (8oz) cream cheese, softened
- 1/4 c. Butter or possibly mararine
- 1/2 c. Lowfat sour cream
- 1/2 c. Lowfat milk
- 2 x Large eggs, lightly beaten
- 1/4 c. Finely copped onions
- 1 tsp Salt
- Dash pepper
Directions
- In a large bowl mash the potatoes till smooth. Add in the cream cheese in small pcs and the butter. Beat till well blended. Stir in the lowfat sour cream. In a seperate bowl combine the lowfat milk, Large eggs and onions. Stir in the potato mix, salt and pepper. Beat till light and fluffy. Place in a casserole and chill for several hrs or possibly overnight. Bake in a 350 oven for 45 min, till the top is lightly browned.
- Serves 8 to 12.
