• New Years Black Eyed Pea and Collards Soup

    This soup is a new twist on an old tradition.


    • 6 cups low sodium chicken stock
    • 12 oz. chopped collard greens
    • 2 cups fresh black eyed peas
    • 1 lb. cooked ground turkey
    • 1/2 cup diced new potatoes
    • 1/2 cup diced onion
    • 1/2 cup diced celery
    • 1/2 cup diced carrots
    • 2 tbs. fresh thyme
    • 1 tbs cracked black pepper


    1. In a large soup pot on med/high heat saute onion until it starts to sweat, then add celery, carrots, potatoes, peas, chicken stock, thyme and black pepper. Let it come to a slight boil then cover and simmer for 25 min.
    2. Add Turkey and collards, continue to simmer with lid removed for 20 minutes.
