New Years Black Eyed Pea and Collards Soup
This soup is a new twist on an old tradition. Ingredients
- 6 cups low sodium chicken stock
- 12 oz. chopped collard greens
- 2 cups fresh black eyed peas
- 1 lb. cooked ground turkey
- 1/2 cup diced new potatoes
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrots
- 2 tbs. fresh thyme
- 1 tbs cracked black pepper
Directions
- In a large soup pot on med/high heat saute onion until it starts to sweat, then add celery, carrots, potatoes, peas, chicken stock, thyme and black pepper. Let it come to a slight boil then cover and simmer for 25 min.
- Add Turkey and collards, continue to simmer with lid removed for 20 minutes.
