New Potato Gratin With Lima Beans And Egg
Ingredients
- 6 sm new potatoes thinly sliced
- 1/2 c. frzn large lima beans thawed
- 3 x stale French bread slices
- 1/4 c. shredded Gruyere cheese - (1 ounce)
- 1/4 c. shredded Parmesan cheese - (1 ounce)
- 3 x hard-cooked Large eggs quartered
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1/2 c. whipping cream
Directions
- Cook potato slices in boiling, salted water to cover 13 min. Add in beans, and cook 2 more min. Remove from heat; drain well.
- Pulse bread slices in a blender or possibly food processor 8 or possibly 10 times or possibly till bread is crumbly.
- Place potato slices and lima beans in a greased 10-inch deep-dish pie plate; sprinkle with half of Gruyere and half of Parmesan. Top proportionately with egg; sprinkle with remaining cheese, salt, and pepper. Pour cream around inside edge of pie plate; sprinkle proportionately with breadcrumbs.
- Bake at 475 degrees for 10 min or possibly till lightly browned.
- This recipe yields 6 to 8 servings.
