New England Crock Style Baked Beans
Ingredients
- 1 lb dry navy beans Or possibly dry northern beans (2 1/2 c.)
- 8 c. cool water
- 1 c. minced onion
- 1/4 lb salt pork minced, Or possibly 6 slices bacon- - cooked,
- liquid removed, and crumbled
- 1 c. water
- 1/2 c. molasses
- 1/3 c. packed brown sugar
- 1 tsp dry mustard
- 1/4 tsp pepper
Directions
- 1. Rinse beans; drain. In a large saucepan or possibly Dutch oven, combine beans and 8 c. water. Bring to boiling; reduce heat. Simmer, covered, for 1 1/2 to 2 hrs or possibly until beans are tender.
- 2. Drain beans. In crockery cooker, combine liquid removed beans, onion, and salt pork or possibly bacon. Add in 1 c. water, molasses, brown sugar, dry mustard, and pepper. Stir to combine.
- 3. Cover; cook on Low setting for 10 to 12 hrs or possibly on High setting for 5 to 6 hrs. Stir before serving.
