    If you want easy to make,guilty free crumbed fish recipe this is the one.Served best with some finger chips Tartare sauce and some mushy Peas.

    Ingredients

    • FOR NACHO CRUMBED FISH:
    • 2 EGGS
    • 100 GM CORN CHIPS,CRUSHED
    • 500GM BASA FILLETS,CUT INTO 3CM WIDE
    • FOR TARTARE SAUCE
    • 1 CUP MAYONNAISE
    • 2 SWEET GHERKINS,CRUSHED
    • 1 TBSP LEMON JUICE
    • FOR MUSHY PEAS:
    • 250 GM FROZEN AND THAWED
    • 1 CLOVE GARLIC
    • 2 TBSP NATURAL YOPGURT
    • PANTRY ITEMS:
    • 1 KNOB OF BUTTER
    • 1 TBSP WATER
    • OIL FOR FRYING

    Directions

    1. Preheat oven and baking tray to 220 C.
    2. Place the chips in single layer on preheated tray and sprinkle with garlic and herb seasoning.Bake for 15-18 mins or until crispy,turning over once during baking.
    3. Mix together tartare sauce ingredients,chill until ready to serve.
    4. Place peas,garlic and butter in a dish and microwave for 5 mins,stirring halfway through.add yogurt and mash.season with salt and pepper to taste.
    5. Heat oil in a frying pan.
    6. Lightly beat eggs with water and pour onto a plate wide enough for the fish.
    7. Pour corn chip crumbs onto another plate.
    8. Dip fish into egg mixture,press into crumb mixture then straight into the hot rying pan. Fry on each side for 3 mins or until golden and crisp.
    9. Serve crumbed fish with oven baked chips,mushy peas,lemon and a dollop of tartare sauce.
