My New Favorite Meatloaf
Servings: 6by myra byanka510 recipes>Based on Cooks' Illustrated recipe. Ingredients
- 2 lbs. ground chuck
- 2 chopped scallions
- 1/4 tsp. garlic powder
- 2 beaten eggs
- 1/2 T Worcestershire
- 2 tsp. Dijon mustard
- 1/4 C milk
- 1/2 C Panko crumbs
- 1 T minced fresh parsley or 1/2 T dry
- 1/4 tsp. dry thyme
- s & p to taste ( I use seasoned salt and pepper)
- dash Tabasco
- 6-8 sliced bacon
- glaze:
- 1/2 C Heinz Chili Sauce
- 1/4 C ketchup
- 1/4 C brown sugar
Directions
- Heat oven to 400 degrees.
- Combo meatloaf ingredients together and shape into square or oval shape.
- Make the glaze and slather half of it on the meatloaf.
- Wrap loaf with bacon, tucking the ends under the loaf.
- Bake 20 minutes, then turn oven down to 350 and bake another 30 minutes.
- Remove loaf from oven and wrap in foil.
- Let rest 20-30 minutes before slicing.
- Serve with rest of sauce.
