  • Mutton Soup

    Ingredients

    • Mutton Bones - 500 gms, (preferably rib bones)
    • Water - 1.5 to 2 litres
    • Salt - 3/4 tsp
    • Turmeric Powder - 1/2 tsp
    • Meat Curry Powder - 1/2 tblsp
    • Oil - 1 1/2 tblsp
    • Cinnamon - 1 one inch stick
    • Cardamoms - 5
    • Cloves - 3
    • Onion - 1, finely sliced
    • Curry Leaves - handful
    • Coriander Leaves - handful, chopped
    • For the masala:
    • Tomatoes - 2, small
    • Water - 1/2 cup
    • Green Chillies - 2
    • Ginger - 1/2 inch piece, peeled
    • Garlic - 5 cloves, peeled
    • Coriander Seeds - 1 tblsp
    • Fennel Seeds - 1/2 tblsp
    • Cumin Seeds - 1 tsp
    • Mint Leaves - few

    Directions

    Ingredients:

    Coriander Leaves - few

    Method:

    1. Grind all the masala ingredients to a smooth paste.

    2. Add the mutton bones, ground paste, water, salt, meat curry powder and turmeric powder into a large pot.

    3. Place it over medium flame and boil for 1 hour or until the meat starts to fall off the bones.

    4. Heat oil in a small frying pan.

    5. Stir-fry the cinnamon, cardamom and cloves for 30 seconds.

    6. Add onions and saute until golden brown.

    7. Add this to the soup along with coriander leaves.

    8. Simmer for 5 to 10 minutes and remove.

    9. Pour into individual serving bowls.

    10. Serve hot.
