Mushroom & Bacon Sauce
A lovely sauce for your roasted beef, lamb, pork or chicken Ingredients
- 90 g butter
- 2 large onions, siced thinly
- 125 g (1/2 pkt) bacon
- 200g mushrooms, rinsed, dried & sliced
- 6 tsp all-purpose flour
- 1. tsp dried origanum
- 1 cup boiling water
- 1 beef stock cube, crumbled in the water
- 1 cup dry red wine
- 3 tsp brandy
- 1/4 cup port wine/ grape juice
- 1 tsp worcestershire sauce
- Salt and pepper to taste
Directions
- Saute bacon and chop, transfer
- Saute onion slices in the same saucepan until translucent
- Add sliced mushrooms , bacon , cook a short while
- Add the rest to the saucepan and simmer 20 minutes
- Make a paste with the flour & a little water, adding it to the sauce , stirring until the sauce thickens
- Pour into a suitable container, store in refridegerator for a few weeks
