Chicken With Mozzarella, Mushrooms & Bacon
Ingredients
- 8 chicken cutlets
- Salt & pepper
- 1/2 pound mushrooms
- 2/3 c. white wine
- 4 tbsp. Madeira
- Mozzarella cheese
- 8 slices bacon
Directions
- Coat cutlets with flour, salt and pepper. Fry 6 to 8 min in butter. Put in baking dish. Saute/fry mushrooms, put over chicken. Add in wines in same pan and scrape over high heat. Lower heat and simmer 5 min to reduce liquids. Pour over chicken. Top with bacon (optional) and Mozzarella. Bake at 300 degrees for 40 min.
