Mushroom And Bacon Pasta (Carbonara)
Ingredients
- 250 gm tagliatelle
- 1 Tbsp. extra virgin olive oil
- 1 x onions, medium
- 1 tsp garlic, crushed
- 4 slc bacon
- 1/4 c. pinenuts
- 250 gm mushrooms
- 1/4 c. white wine
- 1/2 c. lowfat sour cream
- 1 x Large eggs
- 1/4 c. parmesan cheese
- 2 Tbsp. parsley, minced
- salt, pepper
Directions
- Cook pasta in a large pan of boiling salted water. Drain well and set aside.
- Prepare the sauce:Dice onion.
- Slice bacon and mushrooms.
- Heat oil in a pan; add in onion, bacon, garlic, pinenuts and cook 3 min till onion is softenned. Add in mushrooms and cook, stirring,2 min. Add in wine and stir through for 2 min till mushrooms are soft. Stir in lowfat sour cream, egg, cheese and parsley and cook over low heat till heated through. Season well.
- Pour sauce over pasta and serve.
