  • Mushroom And Bacon Pasta (Carbonara)

    Ingredients

    • 250 gm tagliatelle
    • 1 Tbsp. extra virgin olive oil
    • 1 x onions, medium
    • 1 tsp garlic, crushed
    • 4 slc bacon
    • 1/4 c. pinenuts
    • 250 gm mushrooms
    • 1/4 c. white wine
    • 1/2 c. lowfat sour cream
    • 1 x Large eggs
    • 1/4 c. parmesan cheese
    • 2 Tbsp. parsley, minced
    •     salt, pepper

    Directions

    1. Cook pasta in a large pan of boiling salted water. Drain well and set aside.
    2. Prepare the sauce:Dice onion.
    3. Slice bacon and mushrooms.
    4. Heat oil in a pan; add in onion, bacon, garlic, pinenuts and cook 3 min till onion is softenned. Add in mushrooms and cook, stirring,2 min. Add in wine and stir through for 2 min till mushrooms are soft. Stir in lowfat sour cream, egg, cheese and parsley and cook over low heat till heated through. Season well.
    5. Pour sauce over pasta and serve.
