Spinach, Mushroom, And Bacon Salad
Ingredients
- 1 lb spinach coarse stems
- discarded, leaves washed well and spun
- dry (about 6 c.)
- 10 ounce mushrooms sliced thin
- 3 x bacon slices cooked till crisp,
- liquid removed, crumbled
- 2 x scallions chopped
- 2 x hard-boiled Large eggs minced
- 1/4 c. Spinach Salad Dressing see * Note
Directions
- Chiffonade spinach and place on platter. Mound mushrooms in center of platter. Sprinkle bacon, scallions, and hard-boiled egg around mushrooms and spinach. Drizzle with Spinach-Salad Dressing.
- This recipe yields 4 servings.
