Muffins
This recipe is so old that the paper it is written on is turning brown. I remember mom making the batter Christmas Eve and in the morning she would quickly pour batter into muffin cups and bake. The smell would get us all up early. All the presents would be opened and she would slip off to the kitchen and come out with hot chocolate and homemade muffins. I can close my eyes and smell the muffins cookin'. Ingredients
- 2 cups shifted flour
- 2 tsp. double acting baking powder
- 1 tsp. salt
- 2 Tbsp. sugar
- 1/4 cup shorting
- 1 cup milk
- 1 egg
Directions
- Sift all dry ingredients; cut in shorting until flour breaks into small particules.
- Mix egg and milk together and add to flour mixture; until a lumpy batter is made.
- (Mom writes: Increase amount of sugar for sweeter muffings to 4 Tbsp.)
- Bake 400 deg. F for 20-25 min.
