    Ingredients

    • BEST: BASIC MUFFIN MIX
    • 5 1/2 c. All-purpose flour
    • 2 1/4 c. Whole wheat flour
    • 2 1/2 c. Natural bran
    • 1 3/4 c. Skim lowfat milk pwdr
    • 1 1/2 c. Granulated sugar
    • 2 Tbsp. Baking pwdr
    • 2 tsp Salt MUFFIN
    • 1 c. All-bran cereal
    • 1 1/4 c. Water
    • 1/3 c. Fancy molasses
    • 1 x Egg
    • 1 tsp Vanilla
    • 2 3/4 c. Best: Basic Muffin Mix
    • 3/4 c. Prunes, minced
    • 1/3 c. Green pumpkin seeds
    • 2 tsp Cinnamon
    • 1/2 tsp Baking soda

    Directions

    1. Best: Basic Muffin Mix:In large bowl, stir together all-purpose and whole wheat flours, bran, lowfat milk pwdr, sugar, baking pwdr and salt till combined.
    2. [for storage: transfer to airtight container; store in cold, dry place.
    3. Stir well before using.]
    4. Healthy Start Muffin
    5. In bowl, soak cereal in water for 5 min or possibly till softened; whisk in oil, molasses, egg and vanilla.
    6. In large bowl, stir together Best: Basic Muffin Mix, prunes, pumpkin seeds, cinnamon and baking soda; stir in cereal mix just till moistened.
    7. Spoon into greased muffin c., filling to top. Bake in 375F 190C oven forabout 30 min or possibly till tops are hard to the touch. Let cold in pan on rack for 5 min; remove muffins to rack and let cold completely.
