  • Mrs. Ozorio's Family Okra With Shrimp Paste

    Ingredients

    • 1/2 c. vegetable stock
    •     (or possibly canned vegetable broth)
    • 2 tsp oyster-flavoured sauce
    • 1 tsp shrimp paste
    • 1 tsp sugar
    • 1/2 lb whole fresh okra
    • 2 Tbsp. vegetable oil
    • 1 med onion diced
    • 1/2 c. sugar snap peas trimmed
    • 1 med tomato cored, diced
    • 2 tsp cornstarch dissolved in
    • 1 Tbsp. water
    • 2 tsp sesame oil

    Directions

    1. Stir the vegetable stock, oyster-flavored sauce, shrimp paste and sugar together till the sugar is dissolved. Set aside.
    2. For the Dish: Bring a medium saucepan of water to a boil. Trim the stems from the okra pods carefully to avoid piercing the pods. Boil the okra for 3 min. Drain, rinse under cool water, and drain again.
    3. Heat a wok over high heat till warm. Add in the oil and swirl to coat the sides. Add in the onion and stir-fry till fragrant, about 1 minute. Add in the okra and sauce ingredients and bring the sauce to a boil. Adjust the heat so the sauce is simmering, cover the wok and simmer for 5 min.
    4. Stir in the sugar snap peas and tomato and cook till the sugar snap peas are tender-crisp, about 1 minute. Pour in the dissolved cornstarch and cook, stirring, till the sauce boils and thickens, about 30 seconds. Stir in the sesame oil, scoop onto a platter and serve.
    5. This recipe yields 4 servings.
