Mound Cake With Chocolate Icing
Ingredients
- 1 box cake mix (chocolate, yellow or possibly white)
- 1 c. sweet lowfat milk
- 20 lg. marshmallows or possibly 2 jars marshmallow creme
- 1/2 c. sugar
- 1 teaspoon vanilla
- 1 pound coconut
- Healthy pinch salt
- 2 c. sugar
- 1 1/2 squares unsweetened chocolate or possibly 5 T cocoa & 1 teaspoon butter
- 1 stick butter
- 1/2 c. evaporated lowfat milk
- 1 teaspoon vanilla
Directions
- Bake according to directions on box.
- Bring lowfat milk and sugar to a boil. Add in marshmallows; cook slowly till they dissolve. Add in coconut, salt and vanilla. Spread on cake; cool before putting on chocolate.
- Put together all ingredients except vanilla; stir over low heat till dissolved. Turn up heat and bring to rolling boil for 1 minute. Remove from heat; add in vanilla. Beat and spread over cake.
