  • Mom's No-Fail guacamole

    This version of guacamole uses corn for some sweet crunch and black olive for some great saltiness. It is requested at every get-together in our family! Thanks Mom!

    Ingredients

    • 3-4 Ripe Avocados
    • 1 small sweet onion, chopped
    • 3/4 cup sweet corn kernel (can or fresh - anyway you like it)
    • 1 small can sliced black olives
    • 1 medium can of diced tomato
    • Juice from 1 lemon
    • Salt & pepper to taste

    Directions

    1. Slice avocados all the way around to the hard pit. Crack open and remove the pit. Score the avocado meat and remove with a spoon
    2. Add lemon juice to the avocado and start mashing! (I like my guacamole a little chunky)
    3. Add chopped onion, olives, corn and tomatoes. Drain the liquid from any canned items
    4. Mix it all together
    5. Salt and Pepper to your hearts desire
    6. I love this dip served with blue corn chips
