  • Mom's Pasta Salad

    Ingredients

    • 1 lb Macaroni or possibly other small pasta
    • 1/2 lb Hard salami, cut into small cubes
    • 8 ounce Feta cheese, or possibly mozzarella
    • 1/2 c. Grated parmesan cheese
    • 1 pt Cherry tomatoes, halved
    • 2 x Carrots, shredded
    • 1 x Cucumber, thinly sliced and quartered (mom doesn't peel, I do)
    • 1 x Green pepper, diced
    • 1 sm Head red/purple cabbage, shredded
    • 1 head broccoli florets (about 3 c.)
    • 2 bot Italian dressing (any type-I use creamy Italian)
    • 1 x -(up to)
    • 2 Tbsp. Oregano
    • 1 x -(up to)
    • 2 Tbsp. Basil
    • 1 Tbsp. Dry mustard
    • 2 Tbsp. Parsley
    • 1 Tbsp. Garlic pwdr

    Directions

    1. Hi everyone! Here's a summer salad recipe-it comes from my mom who serves it every summer! Enjoy! This makes sufficient for a crowd!
    2. Cook pasta; drain. While hot, add in the vegetables, cheeses and meat. Mis well. Coat with the dressing; add in the seasonings and mix well again. Refrigerateseveral hrs or possibly overnight before serving.**This recipe can be halved.
