  • Molasses Barbecued Pork Tenderloin, a new book and a new lake

    Ingredients

    • 12oz (360gr) pork tenderloin
    • 3 tbs molasses
    • 2 tbs coffee
    • 1 tbs Balsamic vinegar
    • 1 tbs Dijon-style mustard
    • 1/2 tsp garlic powder
    • 1/2 tsp chili powder
    • 1/2 tsp paprika
    • 1/4 tsp celery salt

    I’ve been busy.

    Fall is my favorite time of year. I love the warm, sunny days and cool, crisp nights.

    Spring and the start of summer cooking on the grill is always wonderful, but by fall I’m looking forward to the return to kitchen and slow food.

    And using all of the delicious vegetables of fall.

    I decided to share my favorite recipes..

    Molasses Barbecued Pork Tenderloin

    Total time: 35 minutes

    Ingredients:

    Instructions:

    Put molasses, coffee, vinegar, mustard and garlic powder into a bowl; stir well

    Sprinkle pork with chili powder, paprika and salt.

    Cook pork on barbecue for 25 – 30 minutes, depending on thickness. Turn to brown on all sides

    After 15 minutes start brushing with molasses sauce, turning at least once and using all of the sauce..

    Pork is done at 145 F (62C). It will be slightly pink in the center which is perfect. If you don’t have a thermometer (instant or remote read) check it after 20 minutes by slicing into middle for a peak. When done let it rest for 3 – 4 minutes, then slice at an angle, into 1″ (2.5cm) thick slices and serve.

    The other night, just before dark, we heard a terrible clatter. It sounded like an army of tanks coming down our lane.

    The dogs got very excited.

    We got very curious.

    We all went to the gate to see what was the matter.

    It was our farmer driving a backhoe. We decided it was his backhoe, since the key was on his key ring along with his car keys and house keys.

    Anyway, after he parked his backhoe by my potager, he came over to chat.

    He’s going to build a pond.

    Speaking French to a local farmer is a bit more challenging than speaking French to our teacher. We understood most of what he was telling us, but really weren’t prepared to discuss irrigation techniques and other agricultural problems.

    So all we know, or think we know, is that he’s building a pond.

    The next morning, just as the sun came up, (he had said he was going to start early) he started digging.

    An hour later there was a big hole, two tractors hauling dirt away and a surveyor.

    Things are looking interesting.

    My neighbor is hoping for a spa….
