  • Moist Dates Cake

    I'm living in the desert shores and why not bake a cake that has dates in it! This is a simple recipe that I came across but changed a little. It is not too sweet and works well with prunes too if you are not a big dates fan.

    Ingredients

    • 310 g pitted dates (or prunes) - chopped
    • 185g butter - cubed
    • 120g castor sugar
    • 250ml water
    • 1 tsp bicarbonate soda
    • 3 eggs
    • 150g self raising flour
    • 75g plain flour

    Directions

    1. Grease a cake tin and cover the base with baking paper.
    2. Place the dates, butter, sugar, water and soda in a small pot/saucepan and bring to boil, stirring occassionally.
    3. Remove from heat and cool it for 30 minutes
    4. Once cooled, mix in the eggs and flour into the dates mixture until well combined.
    5. Pour into the cake tin and bake for about 50 minutes at 160 degrees (please use your oven specs) or until toothpick comes clean.
    6. Let the cake stand for 10 minutes before turning onto a wire rack to cool.
