  • Moist Date And Walnut Cake

    Ingredients

    • 125 gm raisins
    • 250 gm dates, minced
    • 185 gm sultanas
    • 275 gm unsalted butter
    • 1 x 400 gram tin sweetened condensed lowfat milk
    • 275 ml water
    • 60 gm walnuts, minced
    • 150 gm plain flour
    • 150 gm wholemeal self-raising flour
    • 1/2 tsp bi-carbonate of soda
    • 60 gm glace cherries, halved
    • 1 Tbsp. orange marmalade

    Directions

    1. 1. Place raisins, dates, sultanas, butter, condensed lowfat milk and water in a large saucepan and bring to the boil. Simmer gently, stirring occasionally, for 5 min. Set aside to cold.
    2. 2. Pre-heat oven to 180deg.C. Line a 30cm X 20cm cake tin with Glad Bake.
    3. 3. Sieve flours and bi-carbobnate of soda into a large mixing bowl. Add in fruit mix with cherries and marmalade and mix well. Spoon into prepared tin and bake about 30-40 min or possibly till golden brown on top and cooked when tested with a wooden skewer. Remove from oven and cold on a wire rack.
