  • Mo's Clam Chowder

    Ingredients

    • 1 pound bacon, diced
    • 6 c. minced onion
    • 6 c. chopped clams, liquid removed
    • 6 c. lowfat milk
    • Paprika
    • Salt and freshly grnd black pepper to taste
    • 1/4 pound smoked ham, diced
    • 1/4 c. flour
    • 12 c. diced potatoes
    • Butter

    Directions

    1. Saute/fry the bacon and ham till bacon is brown. Drain off the fat. Add in the onion and saute/fry till it is limp. Stir in the flour. Add in the potatoes and clams and cook about 15 min till potatoes are very soft. Add in the lowfat milk and season to taste with salt and pepper.
    2. Serve warm with a dollop of butter and sprinkling of paprika on top of each serving. Can be reheated. Serves 12 to 14 generously.

      I live 7 miles from the original Mo's and have had the chowder often. This is fairly close to the real thing. I would include the clam juice, otherwise the taste is more a potato soup with a hint of clam.
