Mint Mushroom Burger
made with button mushrooms and mint leaves, grilled with olive oil , gently tucked into burger buns together with vegetables and sauces. Ingredients
- For burger patties
- 1 can button mushrooms (about 300g) - chopped or processed into fine pieces
- 2 sprigs mint leaves - shredded
- 3 shallots - chopped
- 1/4 cup bread crumbs
- 1 egg (for vegetarians, use a bit of cornflour)
- 3 tbsp olive oil
- Salt and pepper for taste
- For pickled onion
- 1 large yellow onion - sliced
- 1/4 cup apple cider vinegar
- Sugar and salt for taste
- Other ingredients
- Mini burger buns - slit to the edge
- Red capsicum - sliced
- Lettuce leaves - sliced
- Cabbage leaves sliced
- Mayonnaise (optional for vegetarians) and chilli sauce
Directions
- For patties
- Mix all ingredients except oil in a large bowl.
- Shape into patties.
- In a non-stick grilling pan, drizzle oil.
- Grill both sides of the patties.
- Remove and keep aside.
- Grill burger buns; remove and keep aside.
- For pickled onion
- Add all ingredients together and let it stand until needed.
- To assemble
- Place patty into grilled burger bun.
- Also tuck in veggies and sauces.
