    Mint Mushroom Burger

    made with button mushrooms and mint leaves, grilled with olive oil , gently tucked into burger buns together with vegetables and sauces.

    Ingredients

    • For burger patties
    • 1 can button mushrooms (about 300g) - chopped or processed into fine pieces
    • 2 sprigs mint leaves - shredded
    • 3 shallots - chopped
    • 1/4 cup bread crumbs
    • 1 egg (for vegetarians, use a bit of cornflour)
    • 3 tbsp olive oil
    • Salt and pepper for taste
    • For pickled onion
    • 1 large yellow onion - sliced
    • 1/4 cup apple cider vinegar
    • Sugar and salt for taste
    • Other ingredients
    • Mini burger buns - slit to the edge
    • Red capsicum - sliced
    • Lettuce leaves - sliced
    • Cabbage leaves sliced
    • Mayonnaise (optional for vegetarians) and chilli sauce

    Directions

    1. For patties
    2. Mix all ingredients except oil in a large bowl.
    3. Shape into patties.
    4. In a non-stick grilling pan, drizzle oil.
    5. Grill both sides of the patties.
    6. Remove and keep aside.
    7. Grill burger buns; remove and keep aside.
    8. For pickled onion
    9. Add all ingredients together and let it stand until needed.
    10. To assemble
    11. Place patty into grilled burger bun.
    12. Also tuck in veggies and sauces.
