  • Mint Chocolate Logs

    Ingredients

    • 1 x Margarine softened
    • 4 ounce Fat-free cream cheese softened
    • 1 x Egg white whipped
    • 1 x Unsweetened chocolate melted
    • 1/2 tsp Vanilla
    • 1/2 tsp Peppermint extract
    • 1 1/2 c. Unbleached flour
    • 3/4 c. Granulated sugar
    • 1/4 c. Almonds finely minced
    • 1/2 tsp Baking pwdr
    • 1/4 tsp Salt
    • 1/2 c. Mint chocolate chips melted

    Directions

    1. Preparation Time: 0:15Preheat oven at 375. In a mixing bowl, combine margarine, cream cheese, egg white, melted chocolate, vanilla, and peppermint extract. Add in flour mixed with almonds, baking pwdr. In another mixing bowl, combine flour, sugar, almonds, baking pwdr, and salt. Cover and chill at least 1 hour, till hard.
    2. Divide one fourth of dough into 12 pcs. Roll each piece into 2 1/2" long strip and place the strips 1" apart on unprepared baking sheets.
    3. Repeat with remaining dough. Bake 8 to 10 min, or possibly till edges are set.
    4. Let cookies cold on sheets 2 min, then remove to a rack and let cold completely. Using a knife or possibly a metal spatula, spread melted chocolate on one end of each log.
