  • Minestrone with Ground Chicken and Wild Rice

    Ingredients

    • typically include small pasta, but in this recipe I used wild rice in place of
    • pasta. While wild rice isn’t a starchy, wheat product, its earthy grain flavor and chewy texture add the
    • same hearty substance as pasta.

    • lb ground chicken thigh (or breast meat)

    • cup chopped red onion
    • 1/2
    • cup thinly sliced peeled carrot

    • small celery ribs, thinly sliced

    • garlic cloves, finely chopped

    • 15.5-oz can stewed tomatoes, with juice

    • 1/2 cups chicken broth
    • 1/2
    • cup wild rice

    • 15.5-oz can cannellini beans, rinsed and drained

    • Preparation
    • Heat
    • a soup pot over medium heat and add the olive oil. Add the ground chicken,
    • onion, carrot, celery, and garlic and cook, stirring to crumble the chicken,
    • until the vegetables begin to soften and the chicken is just cooked through,

    Take

    this warm, wholesome minestrone to the table and no one will be disappointed.

    Its rich flavors and meaty texture hide the fact that this is one light, fresh,

    and healthful soup.

    8-9 minutes (slightly less for breast meat).

    Chicken and Vegetables Beginning to Cook Cooked Chicken and Vegetables Add

    the tomatoes, with juice, and season with salt and pepper. Bring to a simmer,

    breaking up the tomatoes as they cook.

    Add the broth and wild rice. Reduce the

    heat to low, cover, and cook slowly until the wild rice is tender, 40-45

    minutes. (Remove the lid for the last 15 minutes to thicken the minestrone, if

    desired.)

    Stir

    the beans into the soup and cook until hot throughout, 5 minutes.

    To serve, divide the

    minestrone among 4-5 soup bowls and garnish with basil ribbons.
