Minestrone Soup
A great soup with lots of veggies! Ingredients
- 2 tablespoons butter or oil
- 2 zucchinis cubed
- 2 stalks of celery chopped
- 1 small yellow onion chopped
- 2 carrots diced
- 1 bunch swiss chard torn
- 1/4 cup chopped parsley
- 1 11 ounce can of kidney beans (mash 2/3 of can)
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 1 clove minced garlic
- 2 cups water
- 6 ounce can of tomato paste
- 1/2 cup dry sherry
- 1/4 cup macaroni or other small pasta
Directions
- Saute zucchini, carrots, onions, and celery in butter or oil for 10 minutes.
- Add garlic and swiss chard and saute for two more minutes.
- Add the rest of the ingredients (except sherry and macaroni) and simmer for one hour.
- Add sherry and macaroni and simmer for another 10 or 15 minutes until the pasta is cooked.
