    A great soup with lots of veggies!

    Ingredients

    • 2 tablespoons butter or oil
    • 2 zucchinis cubed
    • 2 stalks of celery chopped
    • 1 small yellow onion chopped
    • 2 carrots diced
    • 1 bunch swiss chard torn
    • 1/4 cup chopped parsley
    • 1 11 ounce can of kidney beans (mash 2/3 of can)
    • 1 teaspoon salt
    • 1/4 teaspoon ground pepper
    • 1 clove minced garlic
    • 2 cups water
    • 6 ounce can of tomato paste
    • 1/2 cup dry sherry
    • 1/4 cup macaroni or other small pasta

    Directions

    1. Saute zucchini, carrots, onions, and celery in butter or oil for 10 minutes.
    2. Add garlic and swiss chard and saute for two more minutes.
    3. Add the rest of the ingredients (except sherry and macaroni) and simmer for one hour.
    4. Add sherry and macaroni and simmer for another 10 or 15 minutes until the pasta is cooked.
