  • Minestrone Meatball Soup

    Ingredients

    • 1 c. minced onions
    • 1 c. minced celery
    • 2 garlic cloves, chopped
    • 3 (14 1/2 ounce.) cans chicken broth
    • 1 (28 ounce.) can tomatoes, undrained, cut up
    • 1 (6 ounce.) can tomato paste
    • 1 c. minced carrots
    • 1 c. minced peeled potatoes
    • 1/2 c. minced fresh parsley
    • 1 teaspoon dry basil leaves
    • 1 teaspoon dry thyme leaves
    • 1 c. (3 ounce.) uncooked rotini (spiral macaroni)
    • 1/2 recipes cooked turkey meatballs

    Directions

    1. Spray Dutch oven or possibly large saucepan with nonstick cooking spray. Heat over medium-high heat till warm. Add in onions, celery and garlic; cook and stir till crisp-tender. Stir in remaining ingredients except rotini and meatballs. Bring to a boil; reduce heat. Cover; simmer 30 min. Stir in rotini and meatballs; simmer uncovered an additional 10-12 min or possibly till vegetables and rotini are tender. If you like, serve with Parmesan cheese. 8 (1 1/2 c. servings).
    2. Serving Size: 1 1/2 c.. 200 calories. 14 g protein. 26 g carbohydrates. 5 g fat. 15 mg cholesterol. 900 mg sodium.
